Chef John’s Peanut Butter Cookies

This week I will be teaching you how to make Chef John’s Peanut Butter Cookies!

  • Baking Soda
  • 1 egg
  • Directions
  • Beat butter, white sugar, brown sugar, peanut butter, salt, baking powder, and baking soda in a stand mixer until smooth.
  • Scrape down the sides of the bowl and beater with a spatula. Add egg and mix for about 1 minute.
  • Slowly mix in flour with the mixer on low. Scrape down the sides of the bowl and beater. Mix on medium until combined, about 30 seconds.
  • Form dough into a ball, cover with plastic and refrigerate for 2-3 hours.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Portion out cookie dough in equal-sized balls on a baking sheet covered with a silicone baking mat. Use damp hands to roll dough into smooth balls. Stamp each ball with a fork in a criss-cross pattern.
  • Bake in the preheated oven for 10 minutes until golden.
  • Leave on the baking sheet for 5 minutes before transferring to a cooling rack.

Chocolate-Covered Sweet and Sour Patch Kids™

Hershey’s Chocolate Chips Semi-Sweet

1 (5 ounces) package chewy sour candy (such as Sour Patch Kids™)
Directions:
  1. Melt milk chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, about 1 minute.
  2. Dip 1 side of each candy into the melted chocolate. Arrange on a flat plate.
  3. Refrigerate until chocolate solidifies, about 15 minutes.

Peanut Butter Cup Cookies

Ingredients:

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt, and baking soda; set aside.
  2. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla, and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.
  3. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

 

Apple Ladybug Treats

Ingredients

  • 1/4 cup of raisins
  •  1 tablespoon of peanut butter
  • 8 thin pretzel sticks

Procedure

  1. Slice apples in half from top to bottom and scoop out the cores using a knife or melon baller. If you have an apple corer, core them first, then slice. Place each apple half flat side down on a small plate.
  2. Dab peanut butter onto the back of the ‘lady bug’, then stick raisins onto the dabs for spots. Use this method to make eyes too. Stick one end of each pretzel stick into a raisin, then press the other end into the apples to make antennae.

Baking: Mugcakes

Hi everyone I have decided to change my theme to baking!

This week I will be teaching you how to make a chocolate mugcake!

Comment and tell me what kind of mugcake you made!

Ingredients:

  • 1/4 cup of flour
  • 1/4 cup of sugar
  • 2 tbls. of unsweetened cocoa
  • 1/8 teaspoon of baking soda
  • 1/8 teaspoon of salt
  • 3 tbls. of milk
  • 3 tbls. of oil
  • 1 tbls. of water
  • 1/4 teaspoon of vanilla

Directions:

  1. Mix flour, sugar, cocoa powder, baking soda, and salt in a microwave-safe mug; stir in milk, canola oil, water, and vanilla extract.
  2. Cook in the microwave until cake, is done in the middle, about 1 minute 45 seconds.
  3. Then, Enjoy!
